Pita Crackers And Sundried Tomato Hummus


Hummus Ingredients:

1 19oz can of chickpeas, drained and rinsed
½ cup tahini (sesame paste)
1 cup plain yogurt
1 teaspoon hot sauce (if you like heat)
Juice and zest of 1 lemon
2 cloves garlic, chopped
1 cup sun-dried tomatoes packed in oil
Sprinkle of salt and fresh ground pepper, to taste

Pita Cracker Ingredients:

4 small 100% whole wheat pitas
1 tablespoon olive oil
1 tablespoon honey
Sprinkle of salt and freshly ground pepper, to taste
Hummus

Steps:

Puree chickpeas in a blender or food processor.
Add tahini, yogurt, hot sauce, lemon juice and zest, garlic, salt, and pepper.
Continue pureeing and add tomatoes.
Check consistency, and add a bit more yogurt or a splash of water, if needed.

Pita Cracker Steps:

Preheat oven to 350.
Whisk together oil and honey, then brush mixture on both sides of each pita.
Sprinkle with salt and pepper.
Cut pitas into 6 or 8 wedges and arrange on a baking sheet.
Bake 10 minutes or until chips have turned golden brown in the center. (Remove chips as they’re done to avoid overcooking).

Makes 4 servings.
