Ingredients:
Wet Ingredients
10 ounces cooked sweet potato (canned or baked or boiled)
1 banana
2 eggs
2 tablespoons sugar-free pumpkin coffee syrup
Dry Ingredients
1 cup Stevia
1 1/2 cup flour
1 teaspoon baking soda
1 teaspoon ground ginger
1/4 teaspoon nutmeg
2 teaspoon cinnamon
1/2 teaspoon salt
Steps:
- preheat oven to 375
- mix all the wet ingredients (sweet potato, banana, eggs, syrup) and the Stevia with an electric mixer
- in a separate bowl, stir the dry ingredients (flour, baking soda, spices) together
- slowly add the dry ingredients to the wet ingredients while hand mixing
- coat a 6 x 9 x 2 pan with non-stick spray
- bake at 375 for 22 minutes
- cool for 10 minutes
- cut into 12 pieces
